This 7 Layer Dip recipe is an absolute FAVORITE of mine. When I had it for the first time, it was at holiday parties or get togethers, but now I make it all the time. In fact, I just had some yesterday! It’s a great dip for any occasion, easy to make and you can customize the layers to what you enjoy the most!
1 31 oz can refried beans
8 oz sour cream
8 oz cream cheese
1 package of taco seasoning
1/2 head iceberg lettuce
4 large tomatoes, diced or 6 roma tomatoes
4 oz. mexican blend shredded cheese or mild cheddar
6 oz. sliced or chopped olives
8 oz. pickled jalapenos
1 bag tortilla chips
Your favorite salsa
Assembling the 7 Layer Dip
First things first, the cream cheese should be very soft. You can leave it out on your counter for a couple of hours or pop it in the microwave. I find that by cutting the cream cheese in half and microwaving for 30 seconds softens it just enough. Next, open the can of refried beans and spread between one large dish or 2 small ones. (These are 8 x 8 dishes) You can heat the beans up a bit if they are difficult to spread. Just be sure you don’t get them really hot, or else your next layer will melt!
In a bowl, whisk together the softened cream cheese, sour cream and taco seasoning. Mix well! If the cream cheese is not soft enough, there will be chunks of it, which really is totally fine! Sometimes if I’m too impatient, I don’t soften the cream cheese and honestly, you can’t tell!
Spread this mixture over the bean layer.
Next, I sprinkled shredded iceberg lettuce, small diced tomatoes and cheese.
That’s it for me! Okay, you got me, that’s not 7 layers… If you want to add more layers, you can add olives, pickled jalapenos, diced onions or guacamole! Enjoy with tortilla chips and salsa!
