French toast is one of those classic breakfast foods that you crave on a crisp fall morning – or really any morning for that matter. Who wouldn’t?! Sweet, buttery and eggy. YUM! I took that classic recipe and spiced it up a bit for the fall season! This Crunchy Pumpkin French Toast recipe is an easy recipe with simple ingredients that you can switch up for any occasion.

 

*I made the full recipe below, but used half the loaf. I saved the remaining liquid and used the rest of the bread the following day. The french toast liquid will last refrigerated for 3-4 days.

 

 

Ingredients:
1 loaf brioche or challah bread (Brioche can be hard to find. If you’re having trouble finding it, French Bread is a great substitute.)
1/2 cup whole milk
1/2 cup heavy cream
7 eggs
3/4 cup pumpkin puree
1/4 cup light brown sugar
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
1 tablespoon pumpkin pie spice
1/8 teaspoon ground nutmeg
1 box corn flakes cereal
Pinch of salt
Butter and oil for cooking

 

Instructions:

Preheat oven to 350 degrees.

Add cornflakes to gallon size bag and crush with the back of your measuring cup. Pour into a bowl with 1 tablespoon of pumpkin pie spice.

In a baking dish whisk milk, heavy cream, eggs, pumpkin puree, sugar, vanilla extract, cinnamon, pumpkin pie spice, nutmeg and salt.

Lay a few of the bread slices in the milk mixture. Let sit for 5 minutes on each side. Take each slice and coat both sides in cereal mixture. Repeat for the rest of the slices.

Heat a pan with butter under medium heat. Lay french toast in pan. Cook on each side for about 5 minutes or until side becomes golden brown. Arrange slices on a racked baking sheet.

 

 

 

 

 

 

 

 

 

Bake for 20-25 minutes or until french toast feels firm in the middle.
Cover with maple syrup, powdered sugar and enjoy!

Make this Crunch Pumpkin French Toast into a balanced meal!

Enjoy with hash browns sautéed with onions, sausage and peppers. Add a yogurt and fruit parfait drizzled with honey and enjoy!
